Distillery history 
 
The Knysna Distillery was conceptualised by Rion and Kay Merryweather and brought to life in 2018. Since then, the distillery has been producing quality gin that has been crafted to perfection. This family-run business is dedicated to changing the way gin is consumed, bought and enjoyed. The Merryweather family began this journey as gin fans, who noticed that there was a gap in the market for a Knysna gin. After discussing embarking on this venture over a couple of gin cocktails (as one does), the idea was cemented. Today, Knysna Distillery and Gin Bar use 5-litre Alembic Copper Pot Stills for recipe development and 200-litre for its epic production. 
 
What is gin and why is it so popular? 
 
Gin has a distinctive taste that is refreshing, and exciting on the palate and pairs well with many mixers. It is no wonder it has become so on-trend in the cocktail scene. Knysna Gin consists of 9 natural botanicals and spring water. These include; juniper berries, coriander, almonds, honeybush, mondei whitei, cardamon, cinnamon, star anise and num num berries. The ingredients are sourced both locally and internationally, with an emphasis on quality. Gin can be enjoyed on its own or added to classic and new cocktails. It can be found on menus around the world. Every gin drinker has their own favourite blend, brand and signature way of enjoying this drink. 
 
The different variations 
 
At Knysna Distillery and Gin Bar, patrons can experience multiple versions of gin. 
 
Knysna Gin Classic - A classic gin with an African twist that received a silver medal at the International Wine and Spirit Convention. 
 
Blueberry Gin - A fun, violet-coloured gin infused with blueberries grown at the foot of the Outeniqua mountains. It received a bronze medal at the International Wine and Spirit Convention. 
 
Honey Gin - This slightly sweet-tasting gin has notes of amber and is made with pure honey, sourced locally from Rheenendal. Honey Gin was also a bronze medal recipient at the 2019 International Wine and Spirit Convention.
 
Seasonal Releases - With limited editions such as the Mulberry and Wild Plum gin, the seasonal releases offer the artisanal gin lover a chance to discover a new combination gin to savour.
 
Drinks, anyone? 
 
The distillery has blossomed into a thriving gin bar, with a multitude of cocktail variations offering a spin on the classic G&T.
